I am looking for the research on the mutation in Amyloid beta. However, I am getting lots of results on pdb entries for beta amyloid. Why there are so many pdb entries and which one to choose for my research ?

Look at this PDB link:
Why are there multiple entries for one protein?
Whenever an experiment is done, submitted and accepted by PDB, an additional entry will appear for the protein. These entries can differ vastly by, e.g. resolution, technology, quality, species, and variants; others are just parts or subdomains of the whole protein, in association with different ligands or protein complexes.
which one to choose for my research?
One might prefer models of high quality, high resolution, complete models, models of a given domain, or ligands in question, or use all of them. As we don't know your research, we cannot say more about it.
