I was wondering where I might find the approximate transcriptome size of the latest Genome Reference Consortium Human Build (GRCh38.p14)?

You don't have to estimate it. Download the latest and most up-to-date transcripome annotation for human, e.g. from GENCODE https://www.gencodegenes.org/human/ and then simply count what you would like to know, be it number of genes, total bases, number of transcripts, exons, you name it.

Thanks! Do you recommended any resources that will enable me to explore and pull readouts from GTF files?
